EATING OUT IN MILAN

In Milan, eating out in one of the numerous places mentioned in the food guides can be both a joy and entertainment. This is because the food is generally of high standards, and the atmosphere very pleasant. In such a big city the number of restaurants is naturally enormous, ranging from the very famous restaurants to the less expensive trattorie or pizzerie. Fast-food is on the increase except for the youngsters, it is still fundamentally alien to the Milanese when they want to spend a pleasant evening tasting either the traditional Milanese cuisine accompanied by some excellent Italian wine or else the most innovative international flavours which can be tried in the more recent Japanese, Indian, Mexican, Thai or African restaurants.
Although saffron is still the distinctive ingredient of almost all dishes in Milanese style, today the Milanese cuisine is no longer as lavish and over-elaborated as in the past and often its main ingredients are freshness, simplicity and good quality.
If the weather allows to eat out in the open air in Milan, you will be surprised to discover how every conceivable open space is filled with tables and chairs, providing the ideal setting for a special evening; no doubt you'll end up, like most Italians, relaxing at the table even when dinner is over for the sheer pleasure of making and entertaining friends, watching passers by and enjoying the nice summertime atmosphere.
 

MILANESE CUISINE

Milan boasts very old culinary traditions which are reflected in a wide variety of dishes. Saffron rice, "casseula", tripe and "panettone", the typical Christmas cake, are but some of the most characteristic. As panettone is the best known and most loved Milanese speciality in the world, here is a short legend about how it was invented.
One Christmas Eve many years ago a banquet was being held at the court of Ludovico Sforza. There was a festive atmosphere with music, singing and jesters performing. The lavish dinner was expected to be crowned with a fabulous cake personally prepared by the head cook and made to a most secret recipe of his. By mistake, or inadvertently, the delicious cake burnt. In the kitchen, beside the desperate head cook, Toni, a kitchen-hand, mixed the remains of the burnt cake with some candied fruit, spices, eggs and sugar. When the new cake was ready he suggested the head cook should serve it. Despite its loaf-like appearance, they had no
alternative. So, arranged on a platter, the cake was taken to the table where, after some initial perplexities, it had great, unexpected success; even Ludovico himself congratulated the head cook on his creation. This is how, the "pan-del-Toni" (Toni's bread), hence called panettone, became the city's emblematic cake.
